Good Eats: Gluten-Free Dark Chocolate Banana Bread by Vanessa Ong

A lot of us never outgrow our sweet tooth. The realization that this once innocent trait is starting to wreak havoc on our bodies (and there is no escaping it) puts something in our foodie selves to death. But fret not: there is always a way around things.

No need to suppress your urge for something moist and chocolatey. Wanderlust wife and mom Vanessa Ann Ong shares the first of her three baked recipes that are gluten-free. This particular recipe is a light and moist banana bread that is also dairy-free, grain-free, and refined sugar-free.

Dark Chocolate Banana Bread

11/2 cups mashed banana
2 tablespoons honey
3 large eggs
1 tablespoon vanilla extract
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup plus 2 tablespoons coconut flour
1/2 cup dark chocolate chips
1/2 cup chopped walnuts

1. Preheat your oven to 350’F
2. Grease a loaf pan
3. Add the mashed bananas, honey, eggs, and vanilla extract to a large bowl and blend well.
4. Add the baking soda, salt, and coconut flour to the wet batter and blend well. Let the batter sit for 5 minutes to give the coconut flour time to absorb the liquids.
5. Pour the batter into the loaf pan and bake for 55 minutes or until the top begins to brown and a toothpick inserted in the center of the bread comes out clean.
6. Cool, slice, and enjoy!

Just Three Things: Breakfast in Bed

Valentines is just a few days away and we've come up with the perfect plan -- wake up late and stay home!! Here are two recipes (one sweet and the other savory) for a fun and simple breakfast in bed to prepare for your special someone. The best part is, you only need three things.
You Will Need
Pancake Mix
Hazelnut Spread
Make the pancakes according to package instructions. Smother Hazelnut Spread and top with heart-shaped strawberries.
You Will Need
Heart Shaped Cookie Cutter
Toast bread. Cut out a heart shape in the middle and remove the bread inside the cookie cutter. Grease both sides of the metal cutter and place back in the bread. Melt butter in a small pan and put the bread in with the cutter. Break an egg in the middle and wait til cooked. Place on a plate and slowly remove the heart shaped cutter. Serve with bacon.
That was easy enough, right? Have a good weekend and Happy Valentine's Day!

Fresh Tomato and Olive Bruschetta

To celebrate our Italian Riviera collection, we present a step-by-step guide to making a simple Bruschetta mixed with olives in honor of its Mediterranean roots. This is easily an HQ favorite.
First step is to get all your ingredients together.
You Will Need:
Any Hard Bread that you prefer
(Baguette, Ciabatta or French Bread works best)
Fresh Tomatoes
Black Olives
Fresh Basil
Olive Oil
Salt and Pepper
Start by chopping the tomatoes into cubes.
Then chop the olives, onions and basil.

Slice garlic in half horizontally for the bread and set aside. Chop a few cloves into small pieces too.
Mix all wet ingredients together and add olive oil.
Season with salt and pepper. [Bonus points if you're using the Morela Salt and Pepper Set
Add chopped basil into the mix. [More bonus points if color coordinated with our Hang Phen Mini Bowls]

Mix everything up well and let it soak for a bit. See how pretty it looks?

Now slice the bread and grill for best results. Using a toaster is fine, too.
Rub with garlic (the one we set aside earlier) as soon as it's warm and toasty.
Place mixture on top of bread and garnish with a basil leaf.
Marvel at your creation and ENJOY!
